Pancake Day
Most people think of groundhogs on February 2, however, in my family it is all about pancakes. The pancakes we make are the thin crepe suzette which I make in my cast iron skillet. We fill them with homemade jam or manjar (dulce de leche), roll them up and sprinkle them with powdered sugar. A tradition worth keeping.
